Vegetable Noodle

YIELDS 4 SERVINGS

8 cups purified water

3 cups chopped red onions

3 large carrots, peeled and chopped

4 celery ribs, chopped

2 tablespoons garlic powder

2 cups chopped spinach

1 (16-ounce) package rice noodles

In a large pot, combine water, onion, carrots, celery, and garlic powder.

Over high heat, bring soup to a boil, reduce heat to a simmer, and cover.

Allow soup to simmer for 20 minutes or until vegetables are tender.

Add spinach and noodles, stirring until spinach is wilted and noodles are tender, about 2 minutes.

Remove from heat and allow to cool.

Consume immediately or transfer soup to a large glass container with a tight-fitting lid. Soup can be stored in the refrigerator for up to 5 days or in the freezer for up to 1 month.
